Coconut Milk
Many think that coconut milk is the water that is found when a coconut is split open but, in fact, coconut milk is the liquid that comes from the grated or shredded meat of the coconut itself. We start by simmering and straining the liquid, then squeezing out as much of the essence of the pulp as possible to produce a creamy, distinctive flavour. best used for: Cocktails, deserts or in a delicious Thai curry.
