Green-olive relish

1/4 cup

Pitted, cured Green Olives

1 tsp

Minced Garlic

1/2

Med. Red Onion, diced small

1/4 cup

Chopped fresh Parsley

1/4 cup

Olive Oil, extra-virg. pref.

1/4 cup

Fresh Lemon Juice Salt and freshly ground - Black Pepper to taste

 
Procedures
 
  1. * originally used as main condiment with "grilled bluefish with green-olive relish, smoked tomatoes, and fennel." in a medium-size bowl or jar, combine all ingredients except salt and pepper.
  2. Mix well, then add salt and pepper to taste.
  3. Cover and refrigerate.
  4. Will keep about 4 days
