Green olive-cucumber salad

1 pack

Lime-flavored gelatin, 3oz

1 cup

Water, hot

1/2 cup

Water, cold

1 tsp

Lemon juice

1 tsp

Lemon rind, grated

1 tsp

Onion, grated

1/2 tsp

Salt

1 med

Cucumber, peeled and chopped

1/3 cup

Green olives, onion-stuffed

 
Procedures
 
  1. Dissolve gelatin in hot water.
  2. Add cold water, lemon juice, lemon rind, onion, and salt.
  3. Chill until slighlty thickened.
  4. Fold in cucumber and olives.
  5. Pour into a 1-quart mold and chill until firm.
