Olive marinate (marinated olives)

Yield: 2 cups
 

2 tbsp

Olive oil

4 each

Garlic cloves, peeled & -- crushed
Zest of 1 orange, cut into -- small pieces

1/2 tbsp

Fennel seeds

2 cup

Oil cured or brined black-- olives, rinsed & drained Olive oil

 
Procedures
 
  1. Heat the olive oil in a small pot over low heat.
  2. Add the garlic, orange zest & fennel seeds.
  3. Simmer for 2 to 3 minutes.
  4. Combine all the ingredients in a glass or ceramic container.
  5. Let stand at room temperature for several hours before serving.
  6. Or store in a covered container in the refrigerator.
  7. Bring back to room temperature before serving.
