Green beans in olive oil

Green beans

1 med

Onion, chopped

2 each

Chopped tomatoes

1 tsp

Salt

1/3 cup

Extra virgin olive oil

3 1/2 tsp

Sugar

½-2 c

water

 
Procedures
 
  1. Trim beans & cut into 3 pieces, wash & drain.
  2. Put onion & tomato into a heavy pan.
  3. Sprinkle with salt & rub in lightly with fingers.
  4. Stir in the beans, olive oil & sugar, mix well.
  5. Cover & cook for 15 minutes over medium heat.
  6. Stir occasionally.
  7. The beans will lose their colour & soften.
  8. When all the moisture has been absorbed, stir-fry the beans for 2 to 3 minutes.
  9. Add ½ cup water, cover & simmer for 40 to 50 minutes, till the beans are tender.
  10. Add more water if necessary, ½ cup at a time.
  11. When cooked, the dish should be very moist but not watery.
  12. Serve cold as part of a buffet.
