Nature’s decision how big each individual olive will be,
we can expect specific sizes for each variety of olive. Nevertheless,
each year farmers find olives as big as golf balls and as small
as the fingernail on your pinky!. Because of the
many different variations in sizes, international cultivators
highlighted the need to develop sizing standards to differentiate
olive types. Today, harvesters work with a globally accepted
olive sizing scale. As well as with defined size categories.
The classification system works to a one kilogram standard.
Meaning that, during harvesting, farmers weigh the number
of olives required to obtain one kilogram. Each category represents
a grouping of olives. For example, if it takes 261 to 290
olives to obtain one kilogram of weight, the group is classified
as Superior.
